GREEN SAMBAR





GREEN SAMBAR..... (U CAN CALL IT..... DIET SAMBAR)

Vegetables (You can use 3 to 4 cups of any of the below combinations of vegetables:
Potatoes, Tomatoes, Onions
OR
Small onions(Kochulli, Cheriya-ulli) - saute in oil before cooking
OR
Brinjal(Vazhuthananga), Onion, Tomato - As reqd
OR
Drum stick, potato, onion, tomato
OR 
Ashgourd, potatoes, tomatoes, onion
OR
Ladies finger - saute before boiling

Other ingredients:
Lemon juice – as reqrd

Salt - As reqd
Coriander leaves for garnishing

For seasoning:
Butter-1tsp, Coriander leaves.

For masala:
Coriander seeds - 2 tbsp
Fenugreek(Uluva) - 1 tsp
Green  chillies - 6 nos
Curry leaves - 4 sprigs
Asafoetida(Kayam) - 1/2" piece (or as reqrd)
Coriander leaves - few sprigs
Coconut - 3/4 cup
Oil - 2 tbsp

1)Heat oil in a pan or a kadai.
2)Fry all ingredients for the masala by adding them one by one(or each separately) till they lose their       raw flavor. 
3)Grind them to a fine paste.
4)Boil some water
5)Add vegetables along with turmeric powder, salt and allow to boil till vegetables are cooked.
6)Take the lempon and squeeze out the juice and add this to the boiling vegetables. 
7)Add cut tomatoes and allow it to boil.
8)Add the ground masala and boil.
9)when itz done top it with butter and garnish with fine chopped fresh coriander leaves..

OUR GREEN SAMBAR IS READY……

ADD ON:- MAKE SURE WE DONT USE TURMERIC POWDER,TAMARIND, RED CHILLIES AND THUAR DHAL....
                 IT WILL CHANGE THE COLOR OF THE DISH.....
