QUICK VEG.PANEER.BIRIYANI

RICE

Take 2 cups of Basmathi rice wash it and cook it in lot of water adding 6 garlic pods, 20 gms of chopped ginger, 3 cardamom, 3 cloves, 2 small pcs of cinnamon, ½ cup of mint leaves, ½ cup of coria

nder leaves,1 tbl spoon of ghee and salt.( cook it only 75% done)
Drain the ¾th cooked rice in strainer. Gently wash it in cold water. Let it drain well. Then spread the rice out on a large platter to cool completely.



TOPPING



Heat 50 gms of pure ghee in a pan and fry 2 nicely sliced onion to brown crispy color and fry few cashew and raisons and keep it a side.

MASALA



In the left over ghee splutter 3 cardamom, 3 cloves, 2 small pcs of cinnamon and add 2 onion sliced, ginger(20Gms) chopped, garlic(20Gms) chopped and 2 sliced green chillies fry it then add some sliced vegetables like carrot, cauliflower, potato and beans and fry it for 3 minutes , now add sliced Paneer 250Gms and 2 sliced Tomato add salt and cook it for another 2 minutes. Finally add chilly powder, pepper powder and coriander powder all one teaspoons each. 

Take a big pan put the cooked RICE AND MASALA, add ½ cup of mint leaves, ½ cup of coriander leaves and 25 Gms of Ghee and add the toppings and mix it well and close the Pan with a tight lid and keep it in slow fire and cook it for another 5 to 7 minutes.
Biriyani ready…
