½ kg Mutton
1 bunch Spinach (Steam and make paste of this)
½ cup cooked channa dal
Pinch of salt
2 nos. Tomato (Make puree)
4 nos. Green Chilies(diced)
4 nos. Onion (medium)-(Boil and make a paste of this)
1 tsp. Ginger garlic paste
1 tbsp. Garam masala
1 tsp. Coriander powder
1 tsp. Red Chili Powder
1 piece Cinnamon
4 nos. Cardamom
4 nos. Bay leaves
Salt to taste
1small Lemon for garnishing (juice)
Coriander leaves for garnishing
And then.......
Heat 3 tbsp ghee in pressure cooker, and add Cloves, Cardamoms and bay leaves.
Add onion paste in the cooker, stir till they become golde brown, then put washed mutton pieces. Fry for 15-20 mins.
Then put tomato puree, ginger garlic paste green chilles and all the masalas salt, chilli and coriander stir for another 15 mins on low heat.
Add ground spinach, Dal and Sugar, into the cooker and keep stirring for 5 mins, then put garam masala and put 1 full glass of water and cook it for another 30 minutes or till the mutton becomes tender.
Garnish with lime juice and coriander leaves.
Also u can top some fresh cream if needed.

--------------Usually we don't use turmeric powder in this, coz that will make a color change in the dish....
